I’m not entirely sure where the summer went. I feel like this happens every year though, time just flies and lots happens but also a lot of plans don’t happen as well. This year there’s been more that hasn’t happened and that’s taken quite a bit of a mindset adjustment. August has been a weird one this year and I have no doubt September will be just as weird!
This weekend, we’re off for a couple of weeks away in the UK and I couldn’t be happier about it. Taking a break just before I head back to uni for my final year to try to reset and ground so I can approach the new schedule of my life refreshed and raring to go! We’re heading to the Lake District and South West Wales for a lot of walking and relaxing (any recommendations are welcomed!) We’re then off to house sit/pet sit whilst a family member is away (if they’re able to travel!?) and that’ll be fun. Working from home means we can be anywhere so that’ll be a nice change from being in our own place for a week!
Back to School
As I mentioned, it’s the start of my last year at university, studying for a BA(hons) Human Nutrition. I have really mixed feelings about this year. I’m excited to be finishing the programme but also impatient to get to the end of the year. It’s been a long 3 years so far, with one more left it’s the final push to keep motivated and energised. I am super excited to be back to my weekly My Week at Uni blogs tracking my learning and what it’s like being at university. This year will be even more interesting as my uni do not seem to know what they’re doing online learning! They’re taking things a few months at a time. So unlike some universities who have just announced this year will all be online learning, my uni are just online for the first 6 weeks. We’ll see how things progress!
I know it sounds weird but stay with me on this one. I’ve been looking at different recipes to use up discard sourdough starter and found this recipe by Zero-Waste Chef. I was sceptical at first but tried it and it’s freaking awesome. I reduced the amount of sugar in the recipe by half because I just didn’t think it’d need that much and I was right, it tastes amazing. So yummy and a great way to use up left over sourdough starter and carrots! I made it into cupcakes and it worked so well.
I have binged this over the past month or so. It’s a weekly podcast which is essentially just a phone call between two friends. The focus is on mental health (particularly men’s mental health) and how conversation and talking can really help our mental health. George and Ollie have a great rapport and it’s great to listen to people going through the same struggles you may be experiencing yourself and knowing you’re not alone. Highly recommend.
I’ve been taking lots of walks so been listening to lots of podcasts. I’ve just started listening to Brené Brown’s podcast and the 5 episodes of so I’ve heard have been insightful, thought-provoking and action-inspiring. Another podcast I highly recommend, it’s a great one for delving into the topics of human psychology and how to be a better human.
