As we head for warmer months this salad is one of my favourite easy nutritious and yummy meals. It can be used as a side for a BBQ, eaten in a wrap with hummus and spinach (a personal fave) or just on it’s own!
Double this recipe if you’re going to make this as a dish to take to a BBQ.
Ingredients:
1 ½ cups of cooked quinoa (about ½ cup dried cooked with 1 ¼ cups of water or stock)
1 ½ cups of cooked black beans (about ¾ cup dried black beans cooked or 1 can)
2-3 spring onions, finely sliced
½ green pepper, chopped
8 cherry tomatoes, chopped into eighths
80g of sweetcorn (1/2 a small tin drained)
1 red chilli (optional – finely chopped)
Handful of coriander, finely chopped
Time: 10 minutes
Serves: 4 as a main
- Combine the ingredients together in a big bowl and mix well – it’s that simple.
- It lasts well in the fridge, it should be good for about 5 days.
